Soup's On

I'm not a foodie.
I'm just not.
I don't look forward to meals.
I don't think about food very often.
I don't enjoy plans or parties that revolve around food.
When I get hungry I'll eat whatever I can find- a sandwich; grits & toast; a can of pineapples; avocado and tomatoes- it doesn't really matter.
I eat because it is necessary, not because I love it.
I cook for my family ,but if I lived alone I would hardly ever cook.

One of the few things I do love to eat is soup.
I could live on soup.
Not canned soup.
That stuff's nasty.

During the fall & winter, I make big pots of soup, and I will eat it everyday until it's gone.  Luckily, my family doesn't share my affinity for soup, so it lasts quite awhile.

Yesterday I made chili and a big batch of kale soup.
The chili is gone because we all ate it, but the soup is patiently waiting in the fridge for my next meal.

Another thing I don't enjoy is cooking.
So recipes can't be too complicated, or I just won't bother with them.
That's what I love about my favorite soup recipes:  they are yummy and easy!

Here are the ones I make on a semi-regular basis:

Kale Soup
This is kale:
















It is delicious and good for you.

1 bunch of kale
1 package of cheese tortellini
2 boxes of broth (I've used chicken and vegetable broth- both are good)
pepper to taste

* Wash the kale, and remove the leaves from them the big center stem.
* Put kale, broth, and pepper (I use lots) in a soup pot
* Boil until kale is limp and tender
* Add tortellini and cook until it's done

I like to serve it with dinner rolls.  For some reason it reminds me of my grandmother.  I don't know why.  She never made this, but it always makes me think of her.


Chili

(not really soup, but still a favorite)
ground turkey or beef
chili seasoning (I like French's Chili-O)
chili beans
Rotel tomatoes
corn

*It's pretty simple.  Just make according to the seasoning packet recipe, but also add corn.

I serve it  with Jiffy cornbread.
We put corn bread, cheese, sour cream, and chili in bowl and mix it up.
Umm.. umm.. good!
Sometimes we add green onions and/or Fritos to the mix.


The two other soups I make often are my grandmother's homemade veggie soup, and corn & potato chowder.  I don't have the recipes right now, so I can't post them.  If I remember I may post them in the future.
